DirectionsToss green tomatoes, sugar and 1 tablespoon lemon juice together in a large nonreactive bowl until well combined. Cover and refrigerate for at least 1 hour or up to 12 hours.Transfer the tomato mixture to a large nonreactive pot and bring to a gentle boil over medium-high heat. Reduce heat to low and simmer, stirring occasionally, until the mixture bubbles, thickens and becomes syrup-like, 35 to 45 minutes.
