Ingredients

2cupsmixed salad greens

1cupshelled edamame, thawed

½mediumraw beet, peeled and shredded (about 1/2 cup)

2tablespoonsred-wine vinegar

1tablespoonchopped fresh cilantro

1tablespoonextra-virgin olive oil

⅛teaspoonsalt

Freshly ground pepper to taste

Directions

Arrange greens, edamame and beet on a large plate. Whisk vinegar, cilantro, oil, salt and pepper in a small bowl. Drizzle one tablespoon of the dressing over the greens and toss gently to coat. Drizzle the remaining dressing over the entire salad.

To make ahead

Refrigerate salad and dressing separately for up to 2 days; whisk dressing before drizzling over the salad.
