4large eggs

4corn tortillas, warmed
1ouncecured chorizo, diced
2tablespoonscrumbled feta cheese
½avocado, sliced
DirectionsCombine oil, shallot, garlic, cilantro, dill, parsley, oregano, lemon zest, lemon juice and salt in a blender; blend until smooth.Transfer 1/3 cup of the sauce to a small skillet (reserve remaining sauce for another use); bring to a simmer over medium heat. Crack eggs into the sauce and sprinkle with pepper. Cook until the whites are set but the yolks are still runny, about 4 minutes. Place 2 tortillas on each of 2 plates; top with the eggs and sauce. Wipe out the pan.Return the pan to medium heat and add chorizo. Cook, stirring once, until crisp, about 2 minutes. Sprinkle the chorizo and feta over the eggs.
