1teaspoonfinely shredded lemon zest

½teaspoondried oregano, crushed

6cupstorn romaine lettuce

1 ½cupschopped cucumber (1 medium)

1cupgrape tomatoes, halved

¾cupchopped yellow sweet pepper (1 medium)

½cupthinly sliced red onion, rings separated

½cupcrumbled reduced-fat feta cheese (2 ounces)

¼cuppitted Kalamata olives, halved

4Lemon wedges for garnish

DirectionsIn a medium bowl, combine chicken, 1/4 cup vinaigrette, lemon zest and oregano; set aside.Meanwhile, in a large salad bowl, toss lettuce with the remaining 1/4 cup vinaigrette. Spoon 1 1/2 cups lettuce into each of four shallow bowls. Top each with about 1/3 cup cucumber, 1/4 cup tomatoes, 3 tablespoons sweet pepper, and 2 tablespoons onion.
