Ingredients
8largecloves garlic, peeled and smashed
¼cupunsalted butter
1 ¼teaspoonssalt
1teaspoonground pepper, plus more for serving
Chopped fresh chives for garnish
DirectionsPlace potatoes and garlic in a large pot or Dutch oven and cover with water. Cover and bring to a boil over medium-high heat; uncover, reduce heat to medium and cook until the potatoes are tender, 20 to 25 minutes. Reserve 1 1/2 cups of the cooking liquid, then drain. Return the vegetables to the pot. Cook over medium-high heat, stirring occasionally, until the potatoes are dry, about 1 minute.
