DirectionsMelt butter in a small saucepan over low heat. Cook, without stirring, occasionally skimming and discarding foam that develops on the surface, until the butter begins to become clear and the milk solids sink to the bottom of the pan, 7 to 9 minutes. Remove from heat and carefully skim and discard any remaining foam from the surface. Slowly and carefully pour the clear butter into a heatproof bowl, leaving the milk solids in the pan; discard the solids.
