Ingredients

1largered onion, thinly sliced into rounds

5tablespoonslemon juice, divided

1cuptorn fresh basil leaves, plus more for garnish

1cuptorn fresh mint leaves, plus more for garnish

2tablespoonsextra-virgin olive oil

¼teaspoonsalt

¼teaspoonground pepper

1small watermelon (about 5 pounds)

1cupdiced English cucumber

¼cupcrumbled feta cheese

DirectionsToss onion slices with 2 tablespoons lemon juice and set aside for 10 minutes. Drain.Meanwhile, combine basil, mint, oil, salt, pepper and the remaining 3 tablespoons lemon juice in a mini food processor; process until smooth.Cut watermelon into 8 half-moon slabs, about 1/2-inch thick; remove rinds. Arrange the watermelon on a platter and top with cucumber and the onion slices. Drizzle with the dressing and sprinkle with feta.
