Ingredients

2tablespoonsextra-virgin olive oil, divided

¼teaspoonsalt

¼teaspoonground pepper

¼teaspoongarlic powder

DirectionsPosition rack in lower third of oven; preheat to 450°F.Place potatoes in a large saucepan, cover with water and bring to a boil. Cook until fork-tender, about 15 minutes.
