Ingredients
2tablespoonsextra-virgin olive oil
2tablespoonsmalt vinegar, divided
½teaspoonsalt plus a pinch, divided
½teaspoonground pepper
Finely chopped fresh herbs, such as parsley or chives, for garnish
DirectionsPreheat oven to 400°F.Combine potatoes, oil, 1 tablespoon vinegar, 1/2 teaspoon salt and pepper in a medium bowl and toss to coat. Spread in a single layer on a large rimmed baking sheet.
