8ounceswhole-wheat spaghetti
2slicesbacon
1 ½cupscorn kernels (from 2 large ears)
1cupsliced scallions
1cupquartered cherryorgrape tomatoes
¼cupdry white wine
¼teaspoonsalt
¼teaspoonground pepper, plus more for garnish
⅓cupheavy cream
¼cupchopped fresh basil
Grated Parmesan cheese for serving
DirectionsBring a large saucepan of water to a boil. Add spaghetti and cook according to package directions. Drain.Meanwhile, cook bacon in a large skillet over medium heat until crispy, 5 to 7 minutes. Transfer to a paper-towel-lined plate to drain. Chop when cool enough to handle. Add corn and scallions to the bacon fat in the pan; cook over medium heat, stirring, until softened, 3 to 4 minutes. Add tomatoes, wine, salt and pepper and cook, stirring and scraping up any browned bits, until the liquid has mostly evaporated and the tomatoes are softened, 2 to 3 minutes. Add cream and bring to a simmer. Return the bacon to the pan along with the spaghetti and basil. Cook, tossing to coat well, until heated through, 1 to 2 minutes.
