8ouncescavatappi or rotini, preferably whole wheat
2tablespoonsextra-virgin olive oil
½cuphalved and sliced onion
2cupschopped broccoli
½teaspoonsalt
¼teaspooncrushed red pepper
½cupmascarpone cheese (3 ounces)
¼cuplow-fat plain Greek yogurt
1teaspoongarlic powder
Grated Parmesan cheese (Optional)
DirectionsBring a large saucepan of water to a boil. Add pasta and cook according to package directions. Reserve 1/2 cup of the cooking water. Drain the pasta and return to the pot.Meanwhile, heat oil in a large skillet over medium-high heat. Add onion and cook, stirring, for 1 minute. Add broccoli, salt and crushed red pepper; cook, stirring, until the vegetables are soft, about 3 more minutes. Remove from heat.Whisk mascarpone, yogurt, garlic powder and the reserved pasta water together in a small bowl. Add to the pasta along with the broccoli mixture. Stir well to coat.
