Ingredients

110-ounce package grape tomatoes

2cupssliced mushrooms

3tablespoonsextra-virgin olive oil, divided

1teaspoonItalian seasoning

¼teaspooncrushed red pepper (optional)

1(5.2 ounce) packageBoursin with garlic and herbs

8ounceswhole-wheat rotini or penne

2largecloves garlic, minced

½teaspoonsalt

½teaspoonground pepper

2cupsboiling water

Directions

Preheat oven to 400°F.

Add pasta and garlic to the baking dish. Sprinkle with salt and pepper. Pour boiling water over the mixture and gently stir. Cover with foil and bake, stirring once, until the pasta is tender, about 20 minutes total.
