1 ½cupshalved cherry tomatoes

1smallclove garlic, grated

¼teaspoonkosher salt

¼cupthinly sliced fresh basil

3tablespoonsextra-virgin olive oil, divided

½teaspoonfreshly cracked pepper

4sliceswhole-wheat sourdough bread (1/2 inch), toasted

¾ouncericotta salata cheese, crumbled

DirectionsCombine strawberries, tomatoes, garlic and salt in a medium bowl. Set aside to macerate for 15 to 20 minutes.Mix basil, 2 tablespoons oil and pepper into the strawberry mixture.Brush toasts with the remaining 1 tablespoon oil. Cut them in half. Divide the strawberry mixture among the toasts and sprinkle with ricotta salata.
