Ingredients
2mediumheads cauliflower (about 2 pounds)
⅓cupslivered oil-packed sun-dried tomatoes, plus 2 tablespoons oil from jar, divided
½teaspoonsalt, divided
½teaspoonground pepper, divided
½cupfinely chopped onion
1clovegarlic, minced
½cupdry white wine
½cupheavy cream
Chopped fresh basilorparsley for garnish (optional)
Directions
Preheat oven to 450°F. Line a large rimmed baking sheet with parchment paper.
Remove and discard any cauliflower leaves; leave the stem intact. Place the cauliflower heads, stem-side down, on a cutting board; slice into 3/4-inch-thick slices. (Some florets will come off as you slice; reserve for another use.) Arrange the slices in a single layer on the prepared baking sheet and brush both sides with 1 tablespoon sun-dried tomato oil. Sprinkle with 1/4 teaspoon each salt and pepper.

Roast, turning halfway through, until the cauliflower is tender, about 25 minutes.
