Balsamic Vinaigrette

1tablespoonwhite balsamic vinegar

¼teaspoonsalt

¼teaspoonblack pepper

1tablespoonolive oil

Cantaloupe and Cucumber Salad

½large cantaloupe, cubed (1 1/2 cups) (see Tip)

½largecucumber, halved lengthwise and sliced (1 1/2 cups) (see Tip)

3tablespoonscrumbled feta cheese

1tablespoonsnipped fresh basil

1tablespoonsnipped fresh mint

DirectionsTo prepare Balsamic Vinaigrette, in a small bowl whisk together white balsamic vinegar, salt and black pepper. Whisk in olive oil to combine. Set aside.To prepare Cantaloupe and Cucumber Salad: In a large bowl toss together cantaloupe, cucumber, feta cheese, basil and mint.Drizzle vinaigrette over the cantaloupe mixture. Toss lightly.
