Ingredients

3medium beets, rinsed (about 1 pound)

18-ounce log goat cheese

⅛teaspoonflaky sea salt

⅛teaspoonground pepper

2tablespoonschopped candied pecans

1tablespoonhoney

Directions

Place beets in a microwave-safe dish. Add enough water to cover the bottom of the dish. Cover the dish with microwave-safe plastic wrap. Microwave on High until fork-tender, 12 to 15 minutes, turning the beets once halfway through to prevent mushiness. Transfer the beets to a cutting board. When cool enough to handle, trim off and discard stems and skin. Slice the beets into 1/4-inch-thick rounds, about 16 slices.

Meanwhile, to aid slicing, place goat cheese in freezer until it’s slightly firm, about 10 minutes. Cut the goat cheese into 1/4-inch-thick slices, about 14 pieces.

To make ahead:

Prepare beets (Step 1) and goat cheese (Step 2) and refrigerate separately for up to 1 day. Proceed with Step 3 when ready to serve.

Nutrition Facts(per serving)

  • Daily Values (DVs) are the recommended amounts of nutrients to consume each day. Percent Daily Value (%DV) found on nutrition labels tells you how much a serving of a particular food or recipe contributes to each of those total recommended amounts. Per the Food and Drug Administration (FDA), the daily value is based on a standard 2,000 calorie diet. Depending on your calorie needs or if you have a health condition, you may need more or less of particular nutrients. (For example, it’s recommended that people following a heart-healthy diet eat less sodium on a daily basis compared to those following a standard diet.)
