½teaspoonvanilla extract
½teaspoonsalt
¼teaspoonground pepper
¼teaspoonground cardamom
4medium sweet potatoes (12 ounces each), peeled and sliced (¼-inch)
⅓cupchopped toasted pecans
Directions
Cover the baking dish with foil. Bake for 30 minutes. Remove foil and continue baking until the sweet potatoes are tender and the sugar mixture is syrupy, 20 to 25 minutes. Remove from oven; let stand for 10 minutes. Sprinkle with pecans and serve.
