As with all food preservation, it’s best to freeze avocados when they are ripe rather than when they’re really better suited for the trash or compost bin.

The best option is to freeze avocado as a purée

In a blender or food processor, combinecut avocadowith fresh lemon or lime juice (use about 1 tablespoon of juice for every medium avocado) and process until smooth. Next, transfer the avocado to an airtight freezer bag, leaving a little room for expansion; then label, date and freeze for up to four months.
