1tablespoonextra-virgin olive oil

2teaspoonsfreshly crackedblack pepper, plus more for garnish

2largeyellow onions, halved and sliced ¼-inch thick (about 6 cups)

¼cupwater, plus more as needed

1cupfinely gratedPecorino Romano cheese, divided

Directions

Place 2 tablespoons butter, 1 tablespoon oil and 2 teaspoons pepper in a large skillet; cook over medium-high heat, stirring constantly, until the butter is melted and the pepper is sizzling, 2 to 3 minutes. Stir in onions; cook, stirring occasionally, until softened and lightly golden brown, 20 to 25 minutes.

Remove from heat; stir in ¼ cup water. Add ¾ cup Pecorino Romano, tossing and shaking the pan constantly to make a creamy sauce to coat the onions. Add additional water, 1 teaspoon at a time, to thin the sauce, as needed.

Sprinkle with the remaining ¼ cup Pecorino Romano. Garnish with additional cracked black pepper, if desired.
