DirectionsBring 1 to 2 inches of water to a boil in a large pot fitted with a steamer basket. Add potatoes to the basket. Cover, adjust heat to maintain a simmer, and cook until the potatoes are tender, 30 to 35 minutes.Remove from heat. Remove the basket and drain the water. Return the potatoes to the pot and stir over low heat until dry, about 2 minutes. Pass the potatoes through a potato ricer into a large bowl. (Alternatively, mash potatoes in the pot with a potato masher.) Add buttermilk, butter, salt and pepper and stir gently to combine.
