1tablespoonextra-virgin olive oil

3stalks celery, finely chopped, plus 1 stalk, thinly sliced, divided

3large shallots, minced

2scallions, sliced

1largecarrot, finely chopped

2largeeggs, lightly beaten

1cupwhole-wheat breadcrumbs or panko

¾cupcrumbled blue cheese plus 1 tablespoon, divided

4tablespoonsno-salt-added ketchup, divided

3tablespoonshot sauce, divided

½teaspoonground pepper

⅛teaspooncayenne pepper

2poundsground chicken or turkey

1tablespoonhoney

Directions

Position rack in upper third of oven; preheat to 350°F. Line a rimmed baking sheet with foil and coat with cooking spray.

Heat oil in a large skillet over medium-high heat. Add chopped celery, shallots, scallions and carrot and cook, stirring occasionally, until tender, about 6 minutes. Transfer to a large bowl, spread into a thin layer and let cool for 5 minutes.

Combine honey and the remaining 2 tablespoons each ketchup and hot sauce in a small bowl. Brush over the loaves.

Bake the loaves until an instant-read thermometer inserted in the thickest part registers 165°F, 20 to 25 minutes. Set broiler to high. Broil until the tops of the loaves are browned, 3 to 5 minutes. Let rest for 5 minutes. Sprinkle with the remaining 1 tablespoon blue cheese and sliced celery.

To make ahead

Individually wrap baked loaves; freeze for up to 1 month.
