After slicing up shallots, garlic and shiitake mushrooms and grating ginger and turmeric, Flay throws his prepped ingredients into his Dutch oven on low heat. With a drizzle of avocado oil, he stirs the aromatics before pouring insake, a Japanese wine made with fermented rice.

“I love sake,” Flay explains. “You can cook with it too, or you can drink it on the side … When I cook the sake in a dish like this, for some reason I can taste it more than a traditional kind of wine.” (Check outour editors’ sake picksif you’re not sure where to start!)

Once that’s simmering, Flay pours in chicken bone broth to build the liquid base, stirring the ingredients in the broth. He then adds in a drizzle of tamari, a splash of sesame oil and a big spoonful of white miso.

“The miso is going to give that nice fermented flavor: a little sweet, a little tart,” the chef says. After giving the broth a whisk, Flay lets the soup simmer for 15 to 20 minutes to help the flavors “meld together.”
