Ingredients
¼cuplemon juice
1teaspoonground sumac (see Tip), plus more for garnish
1teaspoonhoney
1clovegarlic, grated
¼teaspoonsalt
¼cupextra-virgin olive oil
2cupsshredded cooked chicken breast (about 12 ounces)
2cupscantaloupe balls (from 1 small melon)
4ouncesfeta cheese, preferably sheep’s-milk, crumbled
1cupfresh mint leaves, torn
¼cuppine nuts, toasted
DirectionsWhisk lemon juice, sumac, honey, garlic and salt in a large bowl. Gradually whisk in oil until combined. Add arugula, chicken, melon, feta and mint. Toss to coat with the dressing.
