1cupthinly sliced yellow onion

1cupthinly sliced red bell pepper

1cupthinly sliced poblano pepper

1cuproughly chopped fresh green beans

1(15 ounce) canno-salt-added black beans, rinsed

¼cupwater

1 ½tablespoons25%-less sodium taco seasoning mix

1cupdiced avocado

½cupchopped fresh cilantro, plus more for garnish

2tablespoonslime juice

12(6 inch)white corn tortillas

Cooking spray

1cuprefrigerated pico de gallo

DirectionsHeat oil in a large skillet over medium-high heat. Add onion, bell pepper, poblano and green beans; cook, stirring often, until tender-crisp, about 4 minutes. Stir in black beans, water and taco seasoning until combined; cook, stirring often, until the juices thicken, about 1 minute. Remove from heat and let cool slightly, uncovered, 5 minutes.Jason DonnellyMeanwhile, combine avocado, cilantro and lime juice in a medium bowl; stir to mash until mostly smooth. Set aside, uncovered, at room temperature, until ready to serve.Preheat air fryer to 400°F for 5 minutes. Stir cheese into the vegetable mixture until evenly combined. Wrap 3 tortillas in a damp paper towel and microwave on High until warm, about 20 seconds. Place the warmed tortillas on a work surface; spoon about 1/3 cup veggie mixture into the center of each tortilla; roll up tightly and place seam-side down on the work surface.
