¼cupall-purpose flour
½teaspoonground cinnamon
¼teaspoonbaking soda

2tablespoonsunsalted butter, softened
⅓cupgranulated sugar
⅓cuppacked brown sugar
1large egg
1teaspoonvanilla extract
½cupraisins
¼cupchopped walnuts, toasted (see Tip)
DirectionsCut a piece of parchment paper to fit the basket of an air fryer.Whisk oats, pastry flour, all-purpose flour, cinnamon, baking soda and salt in a medium bowl. Beat tahini and butter in a large bowl with an electric mixer until blended into a paste. Beat in granulated sugar, brown sugar, egg and vanilla. Stir in the oat mixture until just moistened. Stir in raisins and walnuts.Drop 4 to 6 dough balls, about 1 rounded tablespoon each, 2 inches apart on the prepared parchment. Using damp hands, flatten each dough ball slightly.Carefully transfer the parchment with the dough balls to the air-fryer basket. Cook at 360℉ until golden, 6 to 7 minutes.
