1large egg, beaten

DirectionsHeat oil in a large skillet over medium-high heat. Add cabbage, scallions and 1 teaspoon garlic; cook, stirring occasionally, until the cabbage begins to wilt, about 3 minutes. Stir in beans, corn, 1 minced chipotle, adobo sauce, 1 tablespoon lime juice, 1/2 teaspoon lime zest and ¼ teaspoon salt. Cook, stirring frequently, just until warmed through, about 2 minutes. Remove from heat; stir in cilantro.On a work surface, lay out egg roll wrappers with 1 corner pointing away from you. Mound 1/3 cup filling in the center of each wrapper. Brush egg around the edges. Fold the corner closest to you over the filling; bring the side corners to the middle. Continue rolling away from you to form a tight seal around the filling.Arrange the egg rolls in an even layer in the basket of an air fryer; coat all sides with cooking spray.
