Add broccoli, garlic and salt; cook, stirring occasionally, until the broccoli is just tender, 8 to 10 minutes.Place 1 tortilla on a work surface and top one half with 1/2 cup cheese, 1/2 cup broccoli and, if desired, 2 tablespoons ham; fold the tortilla in half to close. Repeat with the remaining tortillas, cheese and broccoli (and ham, if using).Working in batches as necessary, coat both sides of the quesadillas with cooking spray. Arrange the quesadillas in a single layer in the air-fryer basket; cook until golden and the cheese is melted, 8 to 10 minutes.Meanwhile, stir together mayonnaise and honey mustard in a small bowl.
