Ingredients

8ouncessliced mushrooms
6large eggs, beaten
⅛teaspoonsalt
⅛teaspoonground pepper, plus more for garnish
All-purpose flour for rolling
1sheetfrozen puff pastry, thawed
Chopped chives for garnish
Directions
Preheat oven to 400°F. Line a large rimmed baking sheet with parchment paper.
Heat oil in a large nonstick skillet over medium heat. Add mushrooms and cook, stirring frequently, until lightly browned, about 5 minutes. Remove from pan and set aside.
Wipe out the skillet and coat it with cooking spray; set over medium-low heat. Add eggs and cook, stirring often, until just set; sprinkle with salt and pepper.

Cool baked rolls completely and refrigerate for up to 4 days. Reheat in the microwave in 30-second increments until steaming.
